Hi! Thank you for stopping by to watch me, Leah, cook kosher. I've been the owner operator of my boutique catering firm in Seattle, Leah's Catering, for the past 14 years.
Just prior to Passover production we make a dinner for one of the local not for profit organizations. Fingering through my recipes, I come across this salad dressing. I'd forgotten about it; how much I love the reduced orange juice sweetened with maple syrup. Now I see the photos from the dinner and think it is perfect to put up on the website. It is spring, I need to lose the winter pounds....time for salads. Lots of salads!

Reduce orange juice to one cup. This photo is for a large quantity of dressing so the scale is not in line with the ingredients in this recipe.
Add orange juice reduction, rice vinegar, maple syrup, salt, pepper and thyme to a bowl or measuring cup.
Add oil and whisk. For a thicker dressing, place the ingredients into a blender. Drizzle the oil slowly while blender is at a low speed.
Shelf live is 4 days. Yields 1 1/2 cups dressing.
